Ricki's Ravioli Chicken Salad

This is another great recipe that I got from Ricki. It is a hearty salad that can easily be served as the main course! The recipe originally was double this in quantity, but I have divided it in half below. Doubled, it fed probably 15-20 people!

1 rotisserie chicken (or 3 whole breasts cooked) cut up in bite size pieces
12 oz bag of fresh ravioli or tortellini
1 C red grapes
1/2 C fresh snow peas, uncooked
2-2 1/2 stalks celery (cut up fairly small)
1/2 cucumber peeled, seeded and sliced or cut up in bite size pieces
1/2 bunch green onion cut up
1/2 C Craisins
6 oz. marinated artichoke hearts (optional) (Ricki did add this)
1 kiwi, peeled and sliced
1/2 can mandarin oranges
1/2 bag of spinach
toasted pecans

Dressing:
1/2-3/4 C mayonnaise
1/3 C lemon juice
salt and pepper to taste

Combine all ingredients except kiwi, orange, spinach and pecans. Mix dressing well and add to salad. Just before serving, stir in spinach and garnish with kiwi, oranges and pecans.

Ramen Walnut Salad

My neighbor Amy made this for a lunch that I went to at her house this summer. It was so good that I could have had several helpings! I restrained myself, but made sure to get the recipe!

1 bunch romaine
1 bunch finely chopped broccoli
4-6 chopped green onions
1C chopped walnuts
1 pkg. Ramen noodles (broken...no seasoning)
4 Tbsp. butter

Dressing
1C Wesson
1C sugar
1/2 C red wine vinegar
3 Tbsp. soy sauce
salt and pepper to taste

Saute walnuts and noodles in butter until light brown. Drain on paper towel. Set aside.

Blend dressing ingredients in blender.

Add sauteed walnuts and noodles to mixture.

Mix with salad and serve.

Mom's Salad

The kids all love this salad that I started making for myself a while back.  There are no specific measurements.  Super easy!

Spinach
Almonds...can use flavored
Mandarin oranges
Feta cheese
Raspberry vinegarette salad dressing
Dried cranberries..."Craisins"
Strawberries
Grilled chicken
