Mimi's Broccoli and Rice Casserole

My mom got this recipe right after she got married, from her mother's best friend, Ople Cline.  Mom has made this many times!

1 C rice
1/2 medium onion
1 stick butter
12 crackers (crushed)
Cream of chicken soup
Small can evaporated milk
1/2 lb. Velveeta
Package frozen broccoli


Cook rice.

Brown onion in 1/2 stick of butter.

Melt other 1/2 stick butter and mix with cracker crumbs

Melt together cream of chicken soup, evaporated milk, and Velveeta.

Add one package frozen broccoli and mix.

Add onion, butter and rice mixture.

Pour into greased casserole.

Cover with buttered cracker crumbs. 

Bake at 350 for 40-45 minutes

Juanita Jackson's Green Beans

I got this recipe from a life-long family friend.  It has become our go-to green bean recipe.  Great flavor!

4 cans Del Monte Blue Lake whole green beans
1/2 c Wesson oil
1/2 c finely chopped onion
1 cube chicken bullion
pepper to taste

Heat beans with juice and Wesson.  Bring to a boil.  Add onion, pepper and bullion.  Reduce to medium heat.  Cook 90 minutes or until liquid is low.  Toss until liquid is gone.

Corn Pudding

This is a staple to any holiday meal for our family.  It is fast, easy, and we all love it.  I should probably make it more often.  There is nothing about it that makes it a special occasion dish, but for whatever reason, it has turned into that for our crew!

1 (6 oz.) can whole kernel corn
1 can cream style corn
1 small carton sour cream
1 egg (beaten)
1 stick butter
1 box Jiffy corn muffin mix

Drain corn.  Mix all ingredients together and bake for about 1 hour at 350.

Kahlua Cake

I have made this dessert for our family more often than any other dessert.  It never lasts long!  If there is one dessert that I would call a "family tradition" for us, this would be it.

1 (2-layer) package yellow cake mix
1 (3.4 oz) package chocolate instant pudding mix
4 eggs
1 cup vegetable oil
1/3 cup Kahlua
1/2 cup sugar
1 cup water

Preheat oven to 350.  Combine cake mix, pudding mix, eggs and oil in a bowl and beat until smooth

Add Kahlua, sugar and water.  Mix well.  Batter will be thin.

Spoon into a greased and floured bundt pan.

Bake 50 minutes or until a wooden pick inserted in the center comes out clean.

Cool in pan for several minutes.

Remove to serving plate.
